Central to all pellet cookers is a digital controller similar to the controllers on modern indoor ovens. You select a temp you want, and there is an LED display that tells you the actual temp. Some of the controllers also are programmable so you can cook at a certain temp for a determined time. Some have leave-in meat probes that can dial back the ovento a holding temp when the meat hits its mark.
It is great when it comes to smoking meat at low temperatures, regular grilling, baking or roasting. You can have problems, though, if you want to sear your meat, it requires much higher temperatures. Sadly, a regular pellet smoker cannot reach them. In that case look around for a pellet grill that comes with an additional sear box that is gas fueled and can heat up to 900 degrees F.

Hey Jeff – I think that due to pellet smokers requiring much of the wood pellet for “fuel” leaving a smaller part for the “smoke” means that you want as much of the smoke to stay in the chamber for as long as possible. Just my opinion. I’ve not used charcoal pellets. Those I’ve spoken with who have used them weren’t extremely happy with the results. Regarding the water pan, I feel that pellet smokers don’t typically require water pans. However, you can surely use one and see how your results go.
One comment I see a lot in various forums like Pellet Heads Forum is that you want as much efficiency as you can get. As with lump charcoal, this means burning as clean of a cook as you can with as little ash as possible. Different pellet mixes will produce differences in what you get in this area, and the cooker you’re using will dictate this to some degree as well.
This is a fantastic grill for the money that’s dependable for outdoor cooking and smoking (hence its name, “Camp Chef”). love your article and got lots of good info from it….i do have a question tho that i didnt see an answer to…..do pellet grills have to use just pellets?….i have 3 acres full of oak branches that could be shredded. my question is can a pellet grill use home shredded wood chips to burn and cook with or is it mandatory that the fuel be in the pellet state?….would be great if i could find a good use for all these fallen branches….

I've been wanting a Yoder for the last year and a half. Finally pulled the trigger on a 640 a couple months ago. Absolutely fantastic. I've been a Weber guy forever and this is my first smoker. This defiantly took my food over the top. My 640 has been incredibly accurate with keeping the heat on the grate to the setting I punch in. Just finished my first brisket and it was fantastic. The only way to go!
The Camp Chef SmokePro is probably the best pellet grill on this list by rating and by performance. It has a decently large area for cooking at 19.2 inches by 22 inches plus its smoking or warming rack is also 6 inches by 24 inches in size. This is one of the best pellet smoker for home use because of its combination of quality features that are never superfluous and works as advertised.
Product is decent but customer service really didn't help me out when they sent me a wrong accessory part that was ordered by their customer service department. Explained that the representative misunderstood my request for an inside shelf but I was sent outer shelf which I have already . Tried to be fair and asked them to pay for the return shipping so I could return it back. They said we will gladly return your $ . Well till this day after numerous calls and false promises for the credit return .. there still is no refund. They seem to care but actually they did nothing. It's been 3 months of calling. Sorry to say we are Done with this company. If they can't settle a small concern and have A + service then don't bother! Good thing they are not the only smoker on the market. Shop around folks.

My brother said his Traeger blanket saved pellets in cold weather, so after talking to him I decided to order one. Used it for the first time today. The blanket went on easily & fit the grill perfectly. The temps this a.m. was below 0 when the meat started smoking. So far so good! The grill hasn't extinguished itself, a problem we always had when cooking in the cold, the temp of the grill is cooking like it does in the summer, & the meat is smoking beautifully. First one, had an auger problem... told that this never happens. Returned to Costco, now on 2nd Unit. FIRE HAZARD, fire pot overloaded after temp dropped from 375 to 100 on a four-hour turkey. When I opened the lid to see what was going on it EXPLODED into a fireball and then had flames shooting out from all sides of the grill. There was even smoke and heat felt from the firebox side of the grill and it looked as though the overloaded firepot was burning into the auger line as well. DANGEROUS PRODUCT!!!

Decided that moving these beasts was a little challenging so I bought a Backwoods Party 10 years ago and loved it. But basically have about worn it out. And as I got older I don’t enjoy getting up at 2 AM and then having to get up every couple of hours, after the 45 minutes of getting it ready at 2 AM, to check it and feed it. I also bought a smaller lightly used Open Range, The Good One. Used their recommended method the first time I cooked with it and hated the Q off of it so bad most of it was wasted, wife hated it too and the son ate most of it. It was extremely ash/strong smoke flavored!

This cooker is still the best value for the dollar for pellet grills I have been looking again for a larger rig, but haven't found one better. If you are looking for an entry level pellet grill this is the one you want. Don't be discouraged by the reviews that talk about leaking smoke or not sealing well because it does leak smoke everywhere. Look at the pic I attached to my review you can see it for yourself it does, but isn't it silly to buy a smoker that doesn't smoke. If you ever go to a BBQ competition you will see most of their smokers leak smoke also.
I have used mine Traeger 15 times and it hasn't worked once. I will not hold the temp within 15 degrees as they state. I can set mine to 225 and will go between 180-370. It also consistently shutting itself off with the same error. I have spoken to cust service 12 times and they are worthless. I have had new controller sent and other various parts. I have been on the phone with them for hours. I always have to take my meat off and finish it on my Weber. They refuse to send me a new one. They still demand to go back through the same damn steps as the last 12 times to debug it. Never again. If you see my post on Craigslist, don't buy it, it's a lemon that Traeger will not support.

It rarely comes to the temperature I set it for, and usually is about 10-15 degrees below, with trying all of the different possible adjustment settings.
Travelers – Of course there’s a perfect pellet smoker for you too. It differs from a basic pellet grill in that it’s smaller and much lighter. It has foldable legs, which allows you to easily take it to the car with you. Everyone’s been on a camping or a field trip at some point. In moments like those, grilled food is something delicious and wholesome. I found the right portable pellet grill for you, which thanks to its size and weight is portable.
I do have a question for you that i didn’t already find answered… How important do you feel a pellet release option is for a pellet fed BBQ? I have only found 3 models that have it; Traeger, Cabela’s Pellet Grill, and Camp Chef. It seems to me that this would almost be a must to make things easier to clean up when done smoking. What are your thoughts on the pellet release, and then your thoughts on these 3 pellet grills.
Thanks Kevin for the reviews and content. Like many of the folks I too will be purchasing a pellet pooper. I have narrowed my choices to a MAK 2 star and a Memphis Elite. One of the earlier posters indicated on the Memphis that the effective direct grilling space was about 1 square foot. I am assuming that with the smaller footprint of the MAK that the direct “flame zone” is less than that. I’m just wondering how much less.
