Thanks Kevin. I am about to buy both a 5 burner gas grill and a smoker for a new bbq island. Rather than buy both, will one of these higher end pellet grills take the place of a traditional propane grill? I can apply the funds for the gas grill to a higher end pellet if it can really do double duty. It has to be able to cook burgers and dogs and steaks etc. Just like a gas grill though. Thoughts?

I have owned my YS640 for about 9 months now. Before I bought this I researched smokers/grills for about 2 years because I had very little experience with them & cooking in general. With the help of a few good websites I have produced some great food. There is a ton of room to cook on & the heat stays pretty much where you want it. Only a few issues I have had is that where the stack mounts to the side of the grill it drips. I did have a scratch on mine from the shipper & when I called about it I was sent a can of matching high temp paint very quickly. One thing that I like the most about this smoker is it is heavy. You can tell that this thing was built to last.
Rubbery skin has very little to do with the type of heat (direct vs indirect). Rubbery skin is a result of too low a cooking temperature. Take your smoker/grill or whatever you use and get the temperature in the mid 400’s or even higher and you will get crispy skin. One thing though never let the internal temperature of your bird get over 150 or you’ll have crispy skin and dry crunchy meat too. Take it off the grill and let is rest a full 30 minutes. Best bird you’ll ever eat no matter which grill, smoker, 50 gal barrel, etc you cooked it on.
You need some temperature control in your grilling system: Even though most propane and charcoal grills include a temperature gauge, they’re not precise. Because the pellet Traeger grill works more like an oven, cooking at a precise temperature setting is a lot easier to do. It’s not quite as precise as the oven in your kitchen, but the Traeger system’s temperature control is surprisingly accurate most of the time. Some manufacturers of low cost pellet grills only offer low, medium, or high temperature settings.
Ever since my visit(s) to All Things BBQ in Wichita, my heart has belonged to the Yoder Smokers. I had researched many comparable size smokers, and guess what - they really are not comparable. The smoker started first time, quickly, and heated up well. I did ribs as my first foray and they were as perfect as my meager talents could get them. I've had my ys640 for almost a year now. I absolutely love it! I debated for a long time before my purchase. I'm an old school charcoal guy at heart. I used to have a gas grill and a coal pit. I got tired of replacing gas grills every few years and having two grills is cumbersome. I considered an egg but the pellet grill is so convenient. I'm impressed by the build quality of the ys640. Most old-timers will tell you that a buildup of soot and grease will improve the taste of your food. This does not prove true, in fact, it’s not good for you and can even be dangerous. At Grills Forever we want your grilling experience to be the best and safe. Therefore, before any cooking session, always clean your grill to optimize its performance and prevent any off-flavors. Check the grease pans or collectors before smoking because the collector could be full and overflow, starting a fire. If there is a grease chute then clean it for sure.


PID controllers: PID controllers are considered by many to be the gold standard of grill controllers. Using complex algorithms, temperatures are accurate to within a few degrees. How? I just sold my house and left the Traeger with it. Now in Mexico and thinking of buying a Green Mountain. I would like to get a little more smoke flavor than what I was able to with my Traeger (which I loved). So how can you use other hard wood to enhance the smoke flavor? Also comment on how to use the tube smoker in one of these pellet fed grills. With 1 1/2″ rib eye, I would smoke for 45 minutes then crank up the heat to about 350 for 13 minutes and it would provide a perfect rare steak every time.
I’m not sure of the dates on the above replies, its now Oct.2017, and I’ve had enough of the Bradley dig. smoker. I live on Long Island NY and the Bradley has trouble getting up to and holding temp. I’ve added a PID to it but have decided to take it up a level. I’ve done a bunch of research and I’m leaning toward the Yoder 640 with Comp. cart. unless you take me out of it. What would you be spending your money on today? I did buy a book though your site, I hope that helps.

Most grills feature a primary cooking area (the main grate) and a secondary cooking area (additional racks). In a pellet grill, there’s less difference between the two grilling areas because it mainly cooks by indirect heat, so the temperature is the same throughout the grill. It’s best to pay attention to a pellet grill’s total cooking area because it is the sum of the primary and secondary cooking areas.
