You prefer a direct heat method of grilling: The Traeger grill uses an indirect heating source, much like an oven, so you won’t be able to sear meat, as many people like to do when grilling a steak. Hey DS – You’re dead on correct re: Grilling vs. Smoking. Most to nearly all Pellet Smokers are used as “smokers” in the truest sense. Louisiana Pellet Smokers boast a direct fire feature for grilling, as do Yoder smokers. However, I’m with you in that a grill is a grill and a smoker is a smoker. GMGs are very popular down here on the FBA circuit. However, most folks do find that they don’t produce the amount of smoke preferred for competition meats (which, in truth is a complaint about many pellet smokers). This is why stick burners and “some” gravity feds get a boost in rep among competition cook teams. That said, I do see folks happily using pellet smokers, and some win with them. One “trick” I see used now and again to boost the smoke output on a pellet smoker is to use one of those smoke tubes… like the A-maze-n Tube Smoker. We ended up going with the Memphis Pro. We were fortunate enough to be able to see all of the manufacturers and models I was most interested in, at Sam’s NW BBQ. (Yoder, MAK, Fast Eddy, GMG’s, a few others, and then, the one we ended up with, Memphis.) Sam took a good amount of time, providing us fantastic information about each model. We ended up with the Memphis Pro for the following reasons: 1) The construction, mainly the double-walled construction; 2) the preciseness of temperature, and being able to hold the temperature (due to reason #1); 3) the extreme ease of changing from smoking to grilling without a lot of effort or reconfiguration; 4) the double hoppers; 5) and another BIGGIE, the fact that grilled or baked foods taste like that, and not like smoked cookies, bread, pizza, etc.
Hey Boyd, it’s really great hearing from you here. I am becoming a much bigger Traeger fan then I was in the past. They have done some excellent work of late on their Grill models. I really think they’re doing a lot of work too improve and restate their original value proposition. Loved the idea of a "pellet smoker" - less stress, delicious meat. Bought mine at Costco 1 year ago and have used it many times with mixed results, not exactly stress less. Last time using it the pellet hopper caught on fire, turns out the auger chamber is packed full of pellets and won't move. Attempted to open chamber to clear and with this model it is extremely difficult (with unit sold thru Costco - newer ones look easier...) so I called customer service hotline. Called different 4 times and talked with a different live person each time and was promised a call back to schedule an in house repair. Never received one call back so I tried to email and again never received a return email. I have no choice but to return smoker to Costco.

It was the last day in the road show so I figured we could always return it if we have buyer’s remorse. Having no past experience with pellet smokers/grills, I am doing my due diligence in researching the reputation of this company and comparing to others in the market. The selling point for us with this particular Traeger grill was the ability to convert this to a built in unit by simply taking off the right side shelf. The sales rep at Costco had a picture of one that his parents had built into an attractive brick surround and we liked the option, however, after reading your post and several other sites, I am finding that Traeger may not be the best investment comparatively and with a purchase this expensive, long-term quality is extremely important to us. In staying within the same price range, I am very interested in the Rec-Tec and it’s stainless steel build. My question is, do you know if the Rec-Tec or another pellet grill @ the $1000 price point can be made to look “built-in” and if so, are there any dangers or potential problems with this.

But, along with some shelves we don’t need, a headboard that won’t fit our new bed, and a gigantic chest freezer I haven’t yet filled, the Egg has languished in the back corner of the garage since then. That’s because a brand new Traeger Timberline 850 was sitting here waiting for us when we arrived and it’s performed so well and become such an essential part of my cooking that now I can’t imagine using anything else. 
Cleaning and Maintenance: Keeping the grill clean is critical if you need to get the most out of the unit. Old debris can influence the viability of the unit thus normal cleaning is vital. In addition, while moving it around, take alert not to thump it since it accompanies little legs which can without much of a stretch tip over the unit when thumped.

Just what I needed for my Traeger Pro 22. Fits like a glove, simple install, and makes adding and pulling rib racks off the smoker much easier. No longer a balancing act trying to get a tray to stay put on top of the pellet hopper lid. This also fits perfectly under Traeger's cover for the Pro 22 models. Have to be a little care you dont pinch your fingers when folding it down (would be a nice future mod if it could somehow be spring assisted), but thats my only gripe.


Regarding getting a good draft, this is a common misconception for pellet grills. The burn pot on pellet grills receives oxygen via a fan unit. As such, there’s no need for a draft to get a measured burn in the traditional sense. Most pellet grills lack sufficient insulation / gaskets, etc to prevent smoke from leaking out of the body. So, unless you’re going with the Memphis or something that uses oven style insulation, you don’t really need a chimney at all IMHO.

The small burn pot is covered with a large deflector plate that absorbs the heat and spreads it out below the cooking surface making them essentially wood-fired convection ovens. Flare-ups are a thing of the past. You need to keep the plate clean because it is right below the food and if you leave sauce and grease on there, it can smolder and leave soot on your food. Carbon buildup will also diminish its heat transmission. 

Overall, I think you would be happy with the smaller smoker / grill. I really like what Green Mountain grills has done with the Davy Crockett model, and that is the unit I have personally. That said,Rec-Tec makes a great product, and some people prefer the cart stand it comes with rather than the fold up legs that Green Mountain grills uses on the Davy Crockett modeling. Either choice would be good for you if you are looking for a smaller unit. I am of course speaking about the mini version of the Rec-Tec. The larger version is excellent as well.

I got my YS640 for a combination Father's Day/ Birthday gift and regardless of whether it's grilling or smoking beef, pork or chicken the results have been outstanding. I can hardly wait to break out the turkeys for the Holiday meals. The direct grilling grates leave a steak with beautiful grill marks and the use of the fruit wood pellets along with quality steaks have made for some incomparable meals. As for quality of the smoker itself, I have sons-in-law that are already jockeying for position to try to be the next to have the YS640 after my demise - - - and we're figuring that won't be for at least 20-30 years!

I have owned my YS640 for about 9 months now. Before I bought this I researched smokers/grills for about 2 years because I had very little experience with them & cooking in general. With the help of a few good websites I have produced some great food. There is a ton of room to cook on & the heat stays pretty much where you want it. Only a few issues I have had is that where the stack mounts to the side of the grill it drips. I did have a scratch on mine from the shipper & when I called about it I was sent a can of matching high temp paint very quickly. One thing that I like the most about this smoker is it is heavy. You can tell that this thing was built to last.
What about temperature control and a digital controller? It is much poorer in this regard than the competitive Camp Chef which is why I decided to give the second place to Z Grills as an alternative to Camp Chef PG24. Therefore the digital controller allows to set the temperature within the range of 180-450 degrees F. A pretty low maximum temperature but it shouldn’t be a problem to enthusiasts of long slow cooking, which usually takes place at lower temperatures.
The digital controller controls temperatures from 150F to 500F in 5-degree increments; that’s the most precise we’ve found on a pellet grill, and gives you a good, precise burn. There’s also Sense-Mate, a thermal sensor that monitors the smoker’s internal temperature, so you can keep an eye on it remotely on your phone via Wifi, letting you adjust the temperature from the app.
In smoke mode the controller is no longer controlled by the thermometer, it merely switches the pellet feeding auger on and off. On time is 15 seconds, off time ranges from 45 seconds at P0, to 165 seconds at P15. Temp and smoke are controlled by the duration of off time: the auger always runs at the same speed. More smoke is produced at higher P settings and lower temp settings because longer off times allow the pellets to smolder. At P0 in smoke mode or "High" in cook mode the auger replenishes the pellets at a faster rate, creating more flame, less smoke.
One thing I’ll mention up front is that the Rec Tec Grill is not sold as a Made in America product. The REC TEC Grill is made in China, however, the heart and soul of the grill (the computer) is made here in the USA. The powder coat is also made in the USA and the final assembly along with quality control takes place at the REC TEC Grill facility in Georgia.
At the end of the day, the act of heating pellets and generating smoke in any pellet smoker is pretty much the same. Yes, some pellet smokers use thicker metal, have better thermostats, air flow, racks, drip flow, etc. But the ask any professional BBQ cooker who uses a pellet grill, and they’ll tell you that the quality of your smoke really does come down to the pellets themselves. However, I can attest to the fact that it is one of the most robust, versatile, and pleasurable pellet grills I’ve used.

This grill produces fall off the bone ribs. I've also cooked a brisket to perfection. My only issue is that I have to clean it after every use. If it isn't cleaned properly (I remove all of the grates and use a shop vac to suction all ashes and unburned pellets) the pellets will back up and when they finally push through, you will have a huge flare up that will potentially burn whatever you are cooking as well as take the paint off the grill itself. Also, I find it works better if you set the dial to OFF and then back to whatever temperature you want. Other than those few quirks, I love this grill. I did find a larger Pit Boss after I bought this one, but it was about $150 more.

To your question about pellet grills, yes. You must always use BBQ grilling pellets with these cookers. You cannot use raw wood with them. However, should you find yourself with access too hard woods like Hickory or maple, or fruit woods like apple, cherry, or peach – this is something that could be readily used in a charcoal smoker.
Smoking v. Grilling more about the temp you’re cooking at than how it’s heated. Smoking happens below 300F most of the time. The Sawtooth Pellet Grill can get to 550F-600F at the top end so it’s more of a grill at that point that smokes. I’ve grilled burgers and fajitas and other stuff like you would a gas grill. Works great and it’s made in the US!

I have several smokers I have used over the years. I have dialed in everyone I own over a course of trial and error. They all get great results, but require me to tend them all throughout the cook. I wanted a smoker that I could easily get to the desired temp, maintain the temp, provide good smoke flavor, and have the size to do a small or large cook, and not need me to be tending it throughout the cook. The higher the temperature range goes, the more your pellet smoker can do. For example, a pellet smoker with a temperature range of 500°F- 700°F is hot enough to sear food and even bake a pizza. You need some temperature control in your grilling system: Even though most propane and charcoal grills include a temperature gauge, they’re not precise. Because the pellet Traeger grill works more like an oven, cooking at a precise temperature setting is a lot easier to do. It’s not quite as precise as the oven in your kitchen, but the Traeger system’s temperature control is surprisingly accurate most of the time. Some manufacturers of low cost pellet grills only offer low, medium, or high temperature settings.

You want your smoker to retain heat and to maintain a constant temperature. If you purchase something that’s inexpensive, yet made with a thin metal, you’re going to regret it because you’re going to be constantly fighting with the temperature. This is a fantastic grill for the money that’s dependable for outdoor cooking and smoking (hence its name, “Camp Chef”). It’s not quite 9.9/10 that is the Camp Chef SmokePro DLX Pellet Grill got, but it has more than enough features and benefits to spare to honor the Camp Chef brand (even though at first glance the PG24 and the SmokePro are practically the same units with color differences).

We all know about Davy Crockett and Daniel Boone, but Traeger is the true pioneer of pellet smoking. This company introduced the first pellet smokers, and it remains the best-known brand, although competition is growing. There's nothing fancy here. Instead of a touch-pad controller, Traeger employs an older-style digital dial controller. No WiFi or meat probes; just no-frills schmokin' from the industry leader.


For example, many grills use and charge for collaborating with a software application on it. I, personally, think this is an absolutely silly feature to include on a pellet grill. Yes, it does start on and off from your phone and change temperatures while you are at Switzerland enjoying Swiss cheese on a lake, but really, is it even logical? I mean, pellet grills have already made the cooking experience as easy as a dream, the least you can do is set the temperature by the click of a button on the appliance yourself! You can’t possibly be that lazy!
The simplicity with which you can use this product is outstanding. From the time that you put it together to the time you smoke meat to the time you clean it, the entire process is extremely simple. It has a power failure restart and a dump tray that can easily be cleaned out. The cooking surface is so large that it is possible to smoke two turkeys at once.
The greatest thing about pellet smokers is that you don’t have to do much to get perfectly smoked dishes. Simply set the digital controller to the desired temperature and the smoker will do the rest. These smokers are pretty much set-and-forget, which means that you’ll be able to spend more time with your guests and still serve them food that has wonderful smoked flavor. It’s this convenience that’s led to the recent rise in pellet grills and other electric smokers.
Hey Chris, IMHO the Blazing Pellet Smoker looks like a solid unit. There’s a good review of it here. I think between the units I might give them a run. Yoder makes quality stuff, and if made in the USA is important to you, they fit as do the Blazings. All this said, if you’re basically using the pellet smoker like a Cambro, you could opt to save a little money and go with the Rec-Tec. Good customer service and solid following.

Ordering through All Things BBQ was VERY simple and easy. In fact, my YS640 arrived a few days sooner than expected/quoted. These grills are expensive, but I am a firm believer in "you get what you pay for". There is no doubt the quality of Yoder craftsmanship is exceptional. So far, I have only been able to use my YS640 a coupe of times. However, I'm looking forward to many meals being cooked on it going forward. If you buy one, you will not be disappointed!


The Yoder YS640 is a more professional pellet smoker which maintains consistent temperature across the cooking grates. This means that you will never have to move your food to avoid overcooking because of the hot spots within the smoker. In addition, cold weather and winds won’t affect the temperature within this smoker as they do with some other pellet smokers.
I had hung my hat on the Yoder and had even contacted the factory and a couple of distributors in the DFW area. Then I did my usual, search craigslist and see if anyone is moving and selling their unit. Low and behold a Memphis Pro!!! Story was brand new, bought for a built in and now cannot use it now. Brand new but you may not have a warranty though. Price… wait for it! $1600!!! You got to be kidding! Scam?? Ok well I will contact him. Surprisingly he had it advertised for a few weeks and only had a few contacts but none serious. Ok, I will come look and if you can plug it in and show me the controller works I will take it. Called the factory and they were quite responsive. They said we probably won’t warranty the controller because we don’t know the history but it will depend on the failure. Everything else we will cover. So right before Thanksgiving headed to Dallas and it basically all looked brand new, plugged in and it did everything you could do without burning pellets.
I've been wanting a Yoder for the last year and a half. Finally pulled the trigger on a 640 a couple months ago. Absolutely fantastic. I've been a Weber guy forever and this is my first smoker. This defiantly took my food over the top. My 640 has been incredibly accurate with keeping the heat on the grate to the setting I punch in. Just finished my first brisket and it was fantastic. The only way to go!
Hi Dillon, thank you for commenting here. As to your question, I think you’d be happy with either a Weber Smokey Mountain cooker 18 inch, or a Daniel Boone Green Mountain Grill pellet smoker. Each are on the smaller side of BBQ Smokers and BBQ Pellet Grills, with just enough extra space to make food for a small family get together as needed. My brother lives in Colorado Springs and had trouble getting his Weber Smokey Mountain cooker to get hot enough and/or regulate temps. He built a wind screen for it at first which helped a ton. Hey Tom! First, thank you so much for commenting on this article. I hope it’s proved useful to you and helping you make your pellet smoker buying decision. I took a look at the smokers you mentioned in your comment, and they appear to be similar in build to those made by Yoder. I can verify that Yoder does exceptionally good work with both the build quality and the heavy gauge steel Construction of their smokers. I don’t know much about the manufacturing practices of the smokers you mentioned. I do like the fact that their controller automatically dropped down to a warming temperature after your food reaches the programmed temperature setting. That’s a feature that I’ve only seen in higher-priced pellet grills like the Memphis Pro Series that I talk about in this article. However, more grills are starting to utilize this in the programming aspect of their controllers. In any case it’s a great feature. To be honest with you I’m not sure that the auger mechanics are going to be all that different between smokers. I’m sure there are differences, but I don’t feel that they are dramatic enough to offer a distinct selling Advantage for the manufacturer. If you haven’t looked at them yet, you might consider taking a look at the Traeger Pro Series pellet grills. You can’t find it on Amazon, but you can find them at different retailers listed on the main Traeger site. A friend of mine has one major competitions using the pro series models.

Pellet meat smokers combine the features off all the other types of smokers. They have some electronics, such as the dial for setting the temperature, which means that they also require electricity. The flavor of the food will be similar to that of the charcoal smokers while keeping the convenience of an electric smoker – meaning you can set it and then forget it. The only thing you have to do is to make sure the smoker doesn’t run out of wood pellets.
Smoking v. Grilling more about the temp you’re cooking at than how it’s heated. Smoking happens below 300F most of the time. The Sawtooth Pellet Grill can get to 550F-600F at the top end so it’s more of a grill at that point that smokes. I’ve grilled burgers and fajitas and other stuff like you would a gas grill. For example, many grills use and charge for collaborating with a software application on it. I, personally, think this is an absolutely silly feature to include on a pellet grill. Vista Outdoor will pay a total purchase price of $74 million for Camp Chef, comprised of $60 million in cash paid at closing and $14 million in cash to be paid out in equal installments on the first, second and third anniversaries of the closing date, subject to certain conditions described below. Hey Dan – I think you’d really up your versatility with a good pellet smoker. Smoke profiles seem to depend largely on the quality of pellets used and then also on the burn consistency of the fire pot. What I mean here is that many pellet smoker users tell me that they prefer models that cycle over faster with frequent temp checks rather than those with longer wait times between temp checks. Cycling faster means that pellets burn more consistently and do not rest to a “charred” state and they “reactivate” This latter problem sometimes results in less than optimal flavor. Yoder smokers cycle very fast and are preferred by many due to this and their thicker metal construction.
I always encourage consumers to get to know a little bit about a brand and company before purchasing a product from them. What differentiates a smart consumer from a consumer is preparedness. Get to know about the company history, its commitment to consumers, its consumer service, after-sales services and warranty. It is also a great idea if you can go through consumer ratings and reports the company’s pellet grill review before buying it. Do not just fall for intelligent marketing and chic packaging. I say almost idiot proof because I still make stupid mistakes when I'm cooking and I like to blame it on the pellet grill once in a while. The unit is extremely easy to use for a novice such as myself. I just fill the hopper with my favorite wood pellets, set the temperature and add my food. I have owned this unit a little over a year and everything from the first burger I cooked until the smoked pork chops I just had for dinner has turned out really, really well. I find myself wanting to either smoke or direct grill everything. We have cooked pizza, turkey breasts, tri-tips, pork butts, burgers, salmon, cookies, brownies, chicken wings, drum sticks, pork chops, ribs, cornbread, vegetables, meatloaf and many other things. Nobody ever complains. LOL I have used it in all types of weather all year long. Once I learned how to use the damper (didn't take long) the heat stays where I want it and remains relatively stable even on the coldest days. I would buy this unit again and I would recommend it to others.
Also own a Big Steel Keg which I love! Didn’t want an egg or a Primo while I was up north WY & CO as I had to many friends complain about cracking when trying to use them in cold weather! Many times at Thanksgiving or Christmas I have cooked on any or all of these devices at -5 to -10. It can be done but with a strong wind it is quite a challenge! My Weber (been thru a couples) and my Keg still have high ratings for great steaks and burgers. But for low and slow you are pushing it to get there and my friends with the ceramic style units say it takes some practice and close attention. What I don’t like about and Egg or my Keg is if you do need to end up feeding the fire on a long cook it is a real serious challenge!
While there's not a lot to dislike about pellet smokers, it really comes down to your cooking/grilling style.  Some Smoking Geeks prefer pellet smokers to traditional smokers (or even the Green Egg style smokers) testifying that flavor is superior to that of other styles of smokers within the price range – and it's hard to argue with them.   While Traeger is the pioneer, there are other brands that give it a run for its money.
Regarding your question about a decrease in smoke flavor when using the pellet grill / smoker, I do believe you will experience a little bit of a drop off. This said, many people find the flavor from pellet grills / movers to be adequate. If you require a stronger smoke profile, you can always use one of the tube smokers that sits inside of the cooking chamber.

Hey Drew – thank you for your comment. All told, most pellet grills are going to average about 1.2 to 1.5 lbs per hour. of pellets per hour at 225, and closer to 1.75 lbs. as you get up to 275. It’s tough to gauge, which is why you are probably seeing different figures across the web. Ambient temperature and pellet composition play a role as well as grill temp. Sorry I don’t have better information for you.
The Green Mountain Grills Davy Crockett is a versatile, wood-pellet grill that is intended for portability. Regardless of its weight, it’s about as minimized as you can get, and takes care of business. Contrasted with more costly wood pellet barbecues, it appears to hold its own on performance, while the one of a kind Wi-Fi usefulness needs some finish.
To solve this problem, several companies have come up with alternative ways to expose food to the flame by allowing you to use the small area directly above the fuel pot.
