The initial design by Mr. Traeger consisted of a “classic” drum barrel shaped grill design with a chimney on top. Instead of the firebox, the grill contained a pellet hopper. It used a fan to distribute the heat evenly over the pellets. Unlike the modern pellet grills, the original design didn’t include any auto-ignition features and the pellets had to be lit manually.

Another thing about pellet smokers which might impress you is that you can also use this type of smoker to grill your food. So, don’t be confused if you come across the term “pellet grill” in this article because it refers to a pellet smoker. When used as a grill, pellet smoker will start up quickly and cook your food with minimal supervision. Depending on your smoker, you can either use the small area above the fuel pot to grill your food or you can put a griddle on the pellet smoker when it is running on high heat.

If the metal is too thick, you will also use a lot of pellets. The walls of a thick-bodied smoker act as a “heat sink”. Heat is taken away from the cooking area and stored in the walls of the cooker. So, it will take a lot of pellets to get the cooking area up to the desired temperature. While thick walls are desirable for some types of cookers, they are not required in pellet smokers.


I have found that using the upper shelf gets more airflow around the meat than the lower shelf. I asked the AmazingRibs.com science advisor Prof. Greg Blonder about the problem (he has a MAK 1 Star). He explained that smoke sticks to cool surfaces and wet surfaces, and the surface of meat warms and dries out after a few hours. When he wants more smoke flavor he uses a strong smoke wood like hickory or mesquite, he starts with cold meat, and then he keeps the meat moist by painting or misting it with apple juice or a mop like Lexington Dip or East Carolina Mop or Texas Mop Sauce. Thank you for a very comprehensive review and all the helpful advice. I would like to know your thoughts about having the burn pot in the center area as in the Rec-Tec, or on the side. My only interest is smoking, not grilling, and I prefer even heat throughout the cooking chamber. How much difference does the location of the burn pot make? Thank you very much.
This smoker offers a decent 418 square inches of grilling space. This is enough to cook around sixteen burgers or four whole chickens. If the grilling space isn’t enough, Traeger also offers a larger unit that offers the same features at a higher price range. But the medium sized one is enough to cook for large groups of people already. Built to have a high capacity, this smoker allows for multiple cooking at the same time.
Do not confuse a pellet grill for gas grills. Like the name suggests, a pellet grill obviously uses pellets for cooking its food. But do not doubt its competence with any other gas or convection appliances. It cooks just as well, if not better. And the secret to this are in its pellets. While pellets vary from brand to brand, the best ones have more wood and less binders like sawdust etc.

After about 10-15 hours of cooking, you should remove the burn cup and dump the ash. If the ash builds up it can prevent ignition. Ash also accumulates in the bottom of the unit, but doesn't impact cooking. A vacuum cleaner with a hose makes short work of it. Only a few manufacturers, such as Blaz'n Grill Works and Camp Chef have a slide out combustion cup that makes cleanup much easier, but you still have to get underneath the deflector occasionally and suck out fly ash that has scattered around the lower part of the grill body.
In 1982 Traeger Heating in Oregon began experimenting with a furnace that would burn wood pellets made from compressed sawdust, a byproduct of the area lumber mills, and before long introduced a home heating system that they sold mostly locally. Since furnaces sold mostly in cold months, before long they began experimenting with a grill that would burn pellets, too. Eventually they created a device with an auger to feed the pellets and a blower to help them burn.
The major issue is the size. It’s the smallest smoker at this price range, and barely bigger than the Junior Elite. Considering the price difference in the two, it’s hard to justify the extra expense, and when you compare it to the other smokers at this level, the Lil Tex seems more than a little lackluster. There’s less cleaning options, less automation, less cooking space. Just less of everything.

Before buying, please note that pellet smokers need access to electricity to run the digital controller, the auger that transports the pellets to the firebox, and the convection fan that circulates the air in the cooking chamber. These cookers can use a lot of pellets at high temps. At high temps there is little or no smoke, and at low temps smoke is unavoidable. So if you want to cook, say, a chicken breast low and slow to retain juices, but you don't want any smoke flavor, you're outta luck. If you want to torch a thin burger to get a crunchy crust and add a little smokiness, you'll get great smoke flavor, but it is hard to get the crust. But if you want killer ribs, bacon, smoked salmon, etc., pellet burners are hard to beat for convenience and quality.
The higher the temperature range goes, the more your pellet smoker can do. For example, a pellet smoker with a temperature range of 500°F- 700°F is hot enough to sear food and even bake a pizza. Consider getting a good thermometer or even a meat probe so you could have an accurate reading and make sure you are cooking your food at the right temperature.

I have had a Traeger Junior Elite for 4 years. In that time I have used it < 50 times. I have replaced a fan motor, a fuse, and now I have been trying to get a thermometer replaced. First time, the service guy dropped the ball and never sent it. Second time- the thermometer got sent around to multiple post offices. Third time, never got to me- apparently they sent it to the wrong address. Fourth time- still waiting. It's been 5 weeks now, and I cannot get the part, and have no idea if the part will fix the grill. Everyone in service has been polite, but incompetent as well. I have had 2 flash fires in the grill from the auger pushing too many pellets into the hot pot, the temperature fluctuates wildly. Save yourself the frustration: avoid Traeger at all costs!

Well built and compact, this smoker and grill still has a 300 square inch cooking space, and is generally big enough to fit a small turkey inside, so it’s ample for six to eight people. It’s really easy to use, with an automated electric start, front mounted thermometer and idiot proof digital controls that make this so simple, an absolute beginner could walk up to it, have a quick play around and start cooking.
And of course, it’s definitely a plus when the company that makes your grill includes a multi-year warranty and top notch customer service. Pellet grills are finicky compared to gas or charcoal grills simply because there are so many more parts that require electronics or that have electrical components… which means there is a fair bit more that can actually go wrong or require service at some point.
My wife and I were one of the first buyers of the YS640 in 2010. We had owned a couple of gas grills that, of course, eventually rust out. My wife saw the YS640 at the Kansas State Fair and called me and said that I HAD to look at this smoker! At first, the smoker had many problems--inaccurate temps, huge swings in temps, etc. Don and Joe kept working on the problems and installing updates--never charging us for updates or service calls. Finally, in about March of 2011, they installed the update that really was the solution. Since then, the YS640 has been a consistent workhorse that does everything as advertised. Built like a tank. built to last. Don and his staff stuck by his product and by his customers. In this day and age, customer service is uncommon. By the way, I thought the YS480 would have been big enough, but my wife said, "our family isn't getting smaller,".....I'm very glad we got the 640 and the second shelf. I have needed it many times. 3.) Had everything set up to bake pizza's . Started up the grill. Installed pizza oven in grill. After about 1 hour grill only got to 280 degrees. Desided we needed to eat dinner and 2 pizza already mad up I placed the pizza's in the grill. 3 minutes later yhe temperature started to go down. Finaly after grill was at 80 degrees I received a message that there was no fire. I removed the pizza oven with pizza's still in. The fire box was full of pellets not burned. I reset the grill and started it back up and no fire message again. Grill is broke again . Only had this grill for 5 months, usef it 6 times and 3 of the times it ruined my cookout.
Yes, no one likes to read the instruction manual. But there are many advantages of learning the specifics of your grill and reading the manual is key. Generally, you should not use water to clean your pellet smoker, so keep your hose pipe far away. These smokers have digital controllers, a motorized auger, a fan and an igniter rod for the fire pot. These parts will get destroyed if they come into contact with water. You should gently dry scrub the dirt off these parts, making sure not to disassemble any parts. Cleaning the thermostat will also prove to be essential; otherwise, it may read internal temperatures inaccurately.
Spent thousands on Traeger, they are ok. Wouldn’t have an issue if they were only $500. But the last one I bought, (Timberline 850) cost $2500 Canadian. Almost burnt my house down because it got over 600F and was still climbing. All Traeger does is mail you more Chinese parts to fix your China made grill. By the end of it you will know your Traeger in and out because you WILL have to take it apart to repair! Overpriced for a smoker with many issues. Timberline lower grill has a portion of the grill removed for some kind of design. They added a 1/4 lip to justify this Grand Canyon of a hole in the back of the grill. Well needless to say if you cook wings or something small and toss them around you will for sure lose the wings to this big stupid hole. But they said they pit the little lip to stop the food from falling... Do they not test these products?

I have yet to have any problems with my smoker, other that what I caused for myself. Please follow the instructions on covering the heat diffuser plate with aluminium foil. When fat from the meats that you are cooking (mine was chicken) it will cook right there, and is difficult to get off. When you follow instructions, this cooker is a dream come true.

I bought the Pit Boss 440 Deluxe & cooked a pork butt. Set it on Smoke (P4) all was well for 2 hours then temperature ran away to over 615 degrees. Ruined that piece of meat. Called customer service & they talked at me instead of listening to me. Tried another pork butt set on 225 degrees temp once again ran away after an hour. Wrote an email to customer service with a response that they were sorry I was having trouble. Tried again today with the same result so sent another email with pictures of settings & indicated temperatures. Guess I'll have to finish this pork butt in the oven & go buy a Treagar Pellet Grill. If Pit Boss corrects this I'll update this review!

Just putting a stamp on your info and recommendations. The Pro is definitely a Pro! Consistent, excellent temp control, juicy and great flavor. Smoke ring, some of my ribs are pink all the way through and dripping with juice. Smoke profile, good, not over powering. I have used 45# of hickory so far, 20# of cherry and a few pounds of apple and pecan. Have not tried anything but Lumberjack but that will be the next experiment. I have tried the smoke tube and it is ok. I was worried about getting an ash or bitter taste as the smoke is fairly heavy and a little acrid smelling if you let it burn from bottom to top. So I lay it down and light on my wife’s Weber gas grill side burner and get the whole thing burning good and then blow it out. If it smells acrid your meat will get some of that taste. Kevin: I have a gas smoker but would like a wood pellet smoker. I’m looking at Traeger Lil Tex (due to price) but I read about Blazn Grill Works, Grand Slam, made in USA, stainless steel grates and a control unit that is very good. Cost about $1195, can’t find dealers so called and talked with the owner. What I read on web site sounds good. He claims on his short video that his auger is the best and doesn’t put torque on the drive due to the design. Any thoughts on this unit? Any advice would be appreciated. Still looking at the Yoder YS640 as price is very similar.
