Beef: For ground beef items such as patties and pies, the ideal temperature would be 250 F. If trying to smoke some steak, we’d suggest 225 F. For both these temperatures, the food should be allowed to cook for around 1 hour to 1 and a half, depending on your preferred doneness. Alternately, for steaks, you can reduce the temperature further, increasing the cooking time for more tender but less juicy results.

After 10 days of not seeing anything in my email I called them. They told me they had no order. After two weeks and more phone calls then a grill finally shows up but without the cover or the pallets which I paid for and was on the order. Three calls into managers and customer service still not resolved. When I threaten to take the grill back to Costco I was told to go ahead and have a nice day.

Brad Barrett at Grill Grates makes a fantastic product. Reverse searing 2″ steaks and chops (or thicker) works great on pellet smokers as you can get the internal temp up to 10-15 degrees below your desired finish temp, remove them and loosely wrap / cover in foil, crank up the smoker with the grates on to say, 400 degrees, and then sear off your protein getting great grill marks with little to no sticking at all. Hey Pete, first thanks for your kind words. Traeger pellet grills fell off a bit quality wise over the past several years. That said, they’ve hired a new CEO – formerly from the Skull Candy Head Phone company – who brought that company’s valuation up considerably. I see them making moves to get back to their roots… aligning themselves with some of the more well known names in BBQ again. From a build quality, they’re making solid pellet grill bodies using fairly heavy steel. The area I’d like to see them improve on is the controllers they use. Right now, GMG is making great strides in claiming some of the entry level pellet smoker market share away from Traeger. This is due to a superior PID controller, advances in built in Wi-Fi monitoring, and outstanding customer service.
The Yoder YS640 is a more professional pellet smoker which maintains consistent temperature across the cooking grates. This means that you will never have to move your food to avoid overcooking because of the hot spots within the smoker. In addition, cold weather and winds won’t affect the temperature within this smoker as they do with some other pellet smokers.
I've been wanting a Yoder for the last year and a half. Finally pulled the trigger on a 640 a couple months ago. Absolutely fantastic. I've been a Weber guy forever and this is my first smoker. This defiantly took my food over the top. My 640 has been incredibly accurate with keeping the heat on the grate to the setting I punch in. Just finished my first brisket and it was fantastic. The only way to go!
Rubbery skin has very little to do with the type of heat (direct vs indirect). Rubbery skin is a result of too low a cooking temperature. Take your smoker/grill or whatever you use and get the temperature in the mid 400’s or even higher and you will get crispy skin. One thing though never let the internal temperature of your bird get over 150 or you’ll have crispy skin and dry crunchy meat too. Take it off the grill and let is rest a full 30 minutes. Best bird you’ll ever eat no matter which grill, smoker, 50 gal barrel, etc you cooked it on.

To be sure, there are pure “smoker” and pure “grills” but there are some exceptionally well-designed hybrids. I bought a Memphis Elite last year, and it is AWESOME! I made a pulled-pork masterpiece two months ago that was absolutely delicious… 8 hours on low temperature (225) then an hour on open flame (switching from a “smoker” insert to an “open-flame’ insert at 700 was easy) and it was awesome!
Even seemingly perfect pellet grillers have trouble getting the cleanup part right even in light of how little ash is produced by pellets. You should search for pellet smokers and grills that efficiently keep the ash from building up on the heat deflector that’s located underneath the grates. The ash should remain on the ash cup and nowhere else. Meanwhile, major cleanup with soap and water is a hassle that requires an apron and gloves.
Ever since my visit(s) to All Things BBQ in Wichita, my heart has belonged to the Yoder Smokers. I had researched many comparable size smokers, and guess what - they really are not comparable. The smoker started first time, quickly, and heated up well. I did ribs as my first foray and they were as perfect as my meager talents could get them. The fact that this smoker weighs in at almost 360 pounds speaks volumes as to how well built and how heavy gauge the metal is( something severely lacking in most other smokers). I had the extra shelf put in and the cooking space is easily double what I had seen in other smokers about the same dimensions. Hats off to All Things BBQ for the high quality Yoder smokers they so proudly distribute!!
Now we come to the part no one likes and that’s cleaning. This smoker won’t clean itself but it does make the process a lot easier. PG24 by Camp Chef Pellet Grill is created in a way that gives you easier access to the fire pot making cleaning out the ash effortless. It also has trap door that allows you to clean the unit without scouring through grease and ash. Anyone who has ever had to clean a smoker grill knows how time-consuming and enormous the task can be. This trap door is only present in expensive units, but you’ll be glad you paid a little more when cleaning becomes effortless. You could also buy the other version that could come with cover (which is $50 more expensive) to make sure the smoker is in the best condition at all times.

Many of the models require you to clean them up for 30 minutes because you have to take out the gooey deflector plate and the greasy grates in order to scrape them off and wash them until they’re shining. Careful cleaning is required when the grease and carbon are covering the deflector plate. The easy-clean grills typically make the parts more accessible but the amount of cleanup remains the same.

What makes this smoker unique, though, is the sear box. It runs on propane, and it gets VERY hot, VERY fast. You can easily sear meats on it, and many use the "reverse sear" method, which means to sear meats AFTER smoking them. Additionally, the sear box can be used as a small propane grill; we use it all the time for things like hot dogs and sausages.

A pretty low maximum temperature but it shouldn’t be a problem to enthusiasts of long slow cooking, which usually takes place at lower temperatures.
Pit Boss have made this heavy duty beast as a semi-professional pellet based smoker, and it shows. It’s absolutely massive, with a colossal amount of cooking space and a lot of tech that makes using it a serious pleasure. It’s actually probably too big for most households, but if you need the most cooking space possible, this is the biggest on our list.
From everything I’ve been able to find online, Traeger Pellet Grills appear to be the very first pellet smokers to be offered on the market. Three stage controller – there are three options to choose from, smoke ( or low), medium and high. It’s an old and very poor controller. It only has three options to choose from, it’s very poor at maintaining temperature. It doesn’t take weather and other factors into account. The result is that the temperature inside the grill can significantly rise or drop without you knowing. Such solution makes it impossible to set a precise temperature and limits the cooking options.

Product is decent but customer service really didn't help me out when they sent me a wrong accessory part that was ordered by their customer service department. Explained that the representative misunderstood my request for an inside shelf  but I was sent outer shelf which I have already . Tried to be fair and asked them to pay for the return shipping so I could return it back. They said we will gladly return your $ . Well till this day after numerous calls and false promises for the credit return .. there still is no refund. They seem to care but actually they did nothing. It's been 3 months of calling. Sorry to say we are Done with this company. If they can't settle a small concern and have A + service then don't bother! Good thing they are not the only smoker on the market. Shop around folks.

The PK-360, with 360 square inches of cooking space, this rust free, cast aluminum charcoal grill is durable and easy to use. Four-way venting means it's easy to set up for two zone cooking with more control than single vent Kamado grills. It is much easier to set up for 2-zone cooking than any round kamado. Beautifully designed and completely portable. Meathead says it is his preferrred grill.

Because the burn pot is small, there is usually a hot spot directly over it. Some units have an optional perforated section above the burn pot so you can put the meat over direct flame, but the ones I've tested still do not sear properly. And there is no way to set up a 2-zone cooking system with a cool zone. As with most other grills and smokers, the differences between lower and upper racks is not huge, so think of it as one heckuva indirect heat convection smoker with precision temperature control. 

The higher the temperature range goes, the more your pellet smoker can do. For example, a pellet smoker with a temperature range of 500°F- 700°F is hot enough to sear food and even bake a pizza. Consider getting a good thermometer or even a meat probe so you could have an accurate reading and make sure you are cooking your food at the right temperature.
