just received my new YS-640 two weeks ago and I absolutely love it. The shipping process and delivery was just as described. The delivery guy unloaded it off the truck, and wheeled the pallet into my garage. Everything was perfect. I am very impressed with the build quality...this thing is a tank. So far have smoked ribs and a brisket, and grilled chicken breasts. The grill heats up much faster than I expected. Temperature holds very steady over the long cooks. I love having the built in probe ports. Still figuring out and tweaking the baffle to control different cooking zones. Only negative thing I say is it can be difficult to manouver in tight quarters because it's so heavy and only the small caster wheels turn. So if you need to move your smoker around a lot, consider the comp cart.
When it comes to buying a new pellet grill, do yourself a favor and conduct some serious research on the grills you are looking to purchase before jumping into it. Just because a pellet grill looks sharp on the outside and has a cheap price tag to go along with it, doesn’t necessarily mean you’ll have spent less money over the course of three or four years compared to buying a well-built pellet grill with a good warranty.

Pellet grills have a couple of very distinct advantages and disadvantages. The best can hold a constant temperature more or less indefinitely, provide even smoke at low temps, cook w/o smoke at high temps, make it possible to evenly cook several different meats and do a good job at two zone cooking. The Yoder excels at these. It is built like a tank, easy to use and I love it. One drawback for some pellet grills is the inability to reach high temps and sear. With the GrillGrates I have reached almost 600F and can sear with the best of them. Drawbacks. Well, it is a bit tricky to clean, but I guess I am keeping it cleaner than I did my previous grills!

Fast, easy assembly. Was ready to smoke my first three racks of babybacks in less than 90 minutes! And the results were spectacular . . . fall off the bone tender. Doesn't quite develop the deep smoky flavor I enjoy, but makes my wife happy because it doesn't. Happy wife, happy life. Only regret is not being able to dial in the temperature to a specific setting. The calibration seems to be off (low) by 20 degrees or so, and Camp Chef has not responded with an answer to my question about whether there is a way to adjust the calibration more precisely. I'm not sure whether running at a higher temp to achieve the setting I want is actually burning more pellet wood than it should. But 30 pounds of hickory pellets lasted more than 20 hours of smoking at 250-300 degrees on the thermostat (smoked three racks of ribs -- 4 hrs, two pork butts -- 6 hours, 90 pounds of turkey (2 x 25 and 1 x 25 + 1 x 15) -- about 13 hours total). A 12-hour smoke of a whole brisket with Rec-Tec Ultimate pellets at about 250 used about 10 pounds.. Am completely amazed at the small amount of ash left behind -- especially compared to the grilling I do over mesquite charcoal..

Something you may not have read in other Pellet smoker reviews is that there are two key concerns: flavor and fuel consumption. As previously stated, pellet smokers are not known for producing a strong smoke flavor, no matter what pellets you use. Though, some brands can be more pronounced than others. Hardwood pellets provide longer overall burn times per pound than fruit wood pellets. 1oo percent fruit wood pellets will also be more expensive on average. So, if you want to do a pellet smoker cook using 100 percent cherry wood pellets, you’re going to use more fuel than you would with a cherry/hardwood blend, and it’s going to cost you more as well on average.
The small burn pot is covered with a large deflector plate that absorbs the heat and spreads it out below the cooking surface making them essentially wood-fired convection ovens. Flare-ups are a thing of the past. You need to keep the plate clean because it is right below the food and if you leave sauce and grease on there, it can smolder and leave soot on your food. Carbon buildup will also diminish its heat transmission.

I remember a time when I was going through some quad-bike reviews; it was all so confusing and I had no clue whom to believe and whom not to. Even when I eventually decided to put my faith in one of them, I kept having second thoughts regarding whether or not they would fail me. Traeger's, unlike other models, have a temperature probe, these sensors tell it if the temperature is too low and automatically feeds more pellets to the fire. You can set up the temperature in 5-degree increments. Other brands and cheaper versions only offer three settings low, medium and high. There is no sensor to monitor the temperature. If you are purchasing a pellet grill it is because you can set it and forget it. If you plan to hoover then it makes more sense to use a standard smoker or to transform your grill into a smoker.
I have owned my YS640 for about 9 months now. Before I bought this I researched smokers/grills for about 2 years because I had very little experience with them & cooking in general. With the help of a few good websites I have produced some great food. There is a ton of room to cook on & the heat stays pretty much where you want it. Only a few issues I have had is that where the stack mounts to the side of the grill it drips. I did have a scratch on mine from the shipper & when I called about it I was sent a can of matching high temp paint very quickly. One thing that I like the most about this smoker is it is heavy. You can tell that this thing was built to last.

I spent a lot of time researching smokers before committing to the 640. I wanted something that can basically be left alone, produce good results and be durable. Hey Ben – thank you for your comment. From a retail user standpoint, I think you’d be happy with either a Yoder or FEC. I really like the PG 500 for the purpose that you’re looking at. Best of both worlds it seems the more I’m looking at it. You can see how they approach grilling steaks in this video. You can incorporate the use of GrillGrates in either pellet grill. Both companies make their units in the USA. Both have great reputations. I’m just partial to Cookshack’s pellet smokers over Yoder as I know more folks who use them.

In reading through the comments section, it seems the recommendations have shifted over time. As it stands today, which smoker would you go with and why: GMG Jim Bowie, Traeger Pro 34, or the RecTec? I like the cooking space of the Traeger Pro 34, but the other 2 seem to have more bells and whistles. I’ve been smoking about 5yrs, so not a pro but not a beginner. Currently have a 10+ year old Traeger Lil Tex elite hand-me down that is ready to give up the ghost. Would appreciate your thoughts!
