Use of the P settings in smoke mode is easy to understand. But one can also use them as a dual function feature in cook mode. Remember, in cook mode the auger idles when the temperature is correct, but the P settings continue to function in idle mode. Ortech recommends the P2 setting as the default idle rate in cook mode. However, as one gains experience, the P settings can be used to improve the grills performance. For example, when using high temperature settings, select P1 or P0 to reduce auger off time and maintain strong, steady heat. If you have trouble hitting low temperatures on a sweltering day, increase the P setting to increase auger off time. It does not have a significant effect on smoke production. The basic rule remains: Low heat = more smoke, high heat = less smoke.


One of Yoder’s most unique features is the Variable Displacement Damper. This makes it easy to smoke, sear, and grill your food using the YS640. This is a metal plate that moves along the lower smoke box. If you move it all the way left, it concentrates heat directly over the firepot for conductive searing. If you move it back to the right, the heat will spread evenly across the entire some box for even cooking. The unit comes with a side firebox which has a removable cooking grate if you want to grill your food in it.
Even if you’ve got a meat thermometer at home, it’s not a bad idea to pick up a smoker with one built in. This is because the built in thermometers send their readings straight to the smokers computer and it automatically adjusts how it’s cooking based not just on how hot it is inside, but how this affects what you’re cooking. Now, unless you’re Gordon Ramsey you probably can’t tell what’s going on inside that turkey you’re cooking, so this is obviously a major plus.

Many of the models require you to clean them up for 30 minutes because you have to take out the gooey deflector plate and the greasy grates in order to scrape them off and wash them until they’re shining. Careful cleaning is required when the grease and carbon are covering the deflector plate. The easy-clean grills typically make the parts more accessible but the amount of cleanup remains the same.
Another option is to put a griddle (or GrillGrates) on the pellet smoker when it's cranked to high heat, get it blistering-hot, add just a little oil to prevent sticking, and sear by conduction on the metal. It should take only two to three minutes per side. This is a good technique for reverse-seared meats: You start them indirect, low and slow on the cooking grate, with a little smoke, and then sear the surface with direct contact to the hot metal griddle to create a delicious brown crust. It's not as good as searing directly over hot coals or gas, but it's a good compromise.

If you don't buy this cooker and spend more than $600 on any cheap thin steeled cooker. By year 2 you will realize you paid for quality that lasts. I joke that no one would steal it because it weighs so much. But it's my baby and it's double locked. I promise you in a year you will look at your wife or family and say "That's the best purchase I ever made!" It's impressive, no one makes a better product. If u buy Traeger or any other cooker. Hey DS – You’re dead on correct re: Grilling vs. Smoking. Most to nearly all Pellet Smokers are used as “smokers” in the truest sense. Louisiana Pellet Smokers boast a direct fire feature for grilling, as do Yoder smokers. However, I’m with you in that a grill is a grill and a smoker is a smoker. GMGs are very popular down here on the FBA circuit. However, most folks do find that they don’t produce the amount of smoke preferred for competition meats (which, in truth is a complaint about many pellet smokers). This is why stick burners and “some” gravity feds get a boost in rep among competition cook teams. That said, I do see folks happily using pellet smokers, and some win with them. One “trick” I see used now and again to boost the smoke output on a pellet smoker is to use one of those smoke tubes… like the A-maze-n Tube Smoker. So what about the question of blends versus 100% pure species pellets?  Should you avoid blends?  Should you only use 100% pure?   That is a web to unweave and depends greatly on what you are cooking as to the correct answer.  Through our testing we found many blends to work very well.  We liked them so much that we incorporated them into what we offer.  Not all blends are created equal though and the amount of hardwood versus flavor wood varies widely across brands.  We also found that some 100% pure pellets such as cherry and apple had harder times reaching higher grilling temperatures and lacked the harder core flavor punch of hickory or mesquite.  Coming from the world of stick burners many new pellet grill owners assume that going 100% cherry or apple is going to work for them since that is what they have grown accustomed to.  At the end of the day, they end up moving to a pellet with a deeper flavor like hickory or mesquite to get the results they are used to.
One of the higher end pellet smokers you might want to check out, and one I’ve had the opportunity to try out myself, is the Memphis Grills Pro model. Running in the $3,000 range, this pellet grill is not for the faint of heart price wise. However, I can attest to the fact that it is one of the most robust, versatile, and pleasurable pellet grills I’ve used.
And of course, it’s definitely a plus when the company that makes your grill includes a multi-year warranty and top notch customer service. I've been using a pellet grill for a LONG time (Traeger for ~15 years?), so I know an upgrade when I see it. I just picked up a YS640, and it's amazing. I love removing the diffuser, adding the Grill Grates, and doing so nice searing! My first cook was a batch of rid eyes, and they were both beautiful as well as delicious. My "guest list" of people wbo want to come over for food keeps growing... Nice problem to have. Good friends, good food, good times.

The entire system was designed in order to make smoking fun and easy. Cleanup is easy, getting everything going is easy, and food turns out great every time. The main cooking area 292 in.², which means you can cook a lot at one time. Since it uses convection technology, the smoky hot air can circulate around the food in order to cook everything evenly.
Has had auger issues from the beginning and a yr later continues. Once it gets running it does a good job of cooking but it takes average 20 minutes to continually unjamb the auger. Called CS after first use and the issue was recognized and it's looks to be poorly designed with a simi free floating impeller/ auger to keep the impeller from jamming into the side housing and this worked for that issue but now the auger just gets jammed up and I have to empty out the hopper tap on the auger then it will start again till it warms up.

I didn’t realize that drafting isn’t important for the sake of temp regulation but what about how the smoke travels from the firebox towards the meat? I also would like to include an element of humidity, is simply putting a pan of water in the cooker or is there a better way?
The higher the temperature range goes, the more your pellet smoker can do. For example, a pellet smoker with a temperature range of 500°F- 700°F is hot enough to sear food and even bake a pizza. Consider getting a good thermometer or even a meat probe so you could have an accurate reading and make sure you are cooking your food at the right temperature.

After an hour on tech support, taking the thing apart, they acknowledged the auger motor was bad and they would send me one. This would be FANTASTIC if I had owned the grill for a year or so and the company was standing by their product... but to insist on sending me a part to a BRAND NEW GRILL and having me replace it...Unacceptable. When I asked for a new replacement hopper system (I get it ... things break... and I'm willing to meet them halfway) they said no... just the motor. I would have kept it had they allowed me to swap out the entire hopper system but I shouldn't have to do surgery on a brand new piece of equipment. Please don't buy this poorly made (China) piece of trash.

The small burn pot is covered with a large deflector plate that absorbs the heat and spreads it out below the cooking surface making them essentially wood-fired convection ovens. Flare-ups are a thing of the past. You need to keep the plate clean because it is right below the food and if you leave sauce and grease on there, it can smolder and leave soot on your food. Of course, we recommend our pellets and have proven them to work fantastically with all of our grills, but we would never be short-sighted enough to say that our owners must only use our pellets.  That just seems a bit, well, wrong.  From our testing and customer feedback, the following brands all worked very well:  B&B, BBQrs Delight, Cooking Pellets.com, Lumberjack and Smoke Ring.

The computer controlled system maintains the smoker temperature with a high degree of precision so you don’t have to deal with fluctuations. Each are on the smaller side of BBQ Smokers and BBQ Pellet Grills, with just enough extra space to make food for a small family get together as needed. My brother lives in Colorado Springs and had trouble getting his Weber Smokey Mountain cooker to get hot enough and/or regulate temps. He built a wind screen for it at first which helped a ton. Turn it on to "Smoke" mode and use the P settings, or cook mode by selecting a temperature. When you select smoke or a temp setting you start the ignition sequence. The fan, igniter and auger motor turn on. The fan stays on until the smoker is turned off. The auger motor continuously delivers pellets to the red hot igniter rod in the firebox for two minutes under normal conditions. Then the igniter rod shuts off and the pellet fire burns with only the assistance of the auger and the fan.


Hey Jimmy, thanks for commenting here about your experience. I’m sorry to hear your experience was less than optimal. I have only cooked on the Traeger pro models. I do know that it is good practice to vacuum out the burn pot after cooks of a few hours or more. Not sure this was where your problems were initiated. Did you contact Traeger support? If so, what was their response?

I have been cooking Southern BBQ for 40 years, my Dad did the same. I have bought ever kind of grill on the market, built many of my own because none of the store bought grills cook very well and don't last because of cheap construction. There are no food probes with this controller as there are on the MAK Pellet Boss, and the controller is mounted to the surface with two screws and no gasket so I fear rain could get into the electronics, but after more than a year of sitting out without the cover in rain and snow, the controller on the IPT I tested is still working fine. Ortech recommends covering your smoker.

The first thing you notice about yoders its the quality! They are testosterone, precision, heavy duty machines. Yoders cut the learning curve from novice to celebrated cook in less than a year, because they allow you to focus on the cooking instead of tending the fire which can take you lots of time. The only issue I have with mine is that the fan vibrates inside making a wierd noise, so I have to open the cooker and re-atach or re-instal the velcro strap that keeps the fan from vibrating. PID Controller–PID Controllers (Proportional Integral Derivative) are devices that most of the grill manufactures don’t fully utilize yet. They can be found as a separate device attached to the grills if you’re handy enough, but all the manufacturers aren’t fully considering them yet. Using a PID controller, you can accurately maintain the temperature while cooking and ensure that the food is cooked automatically to perfection without much supervision.
Extremely high build quality. It's heavy. Solid. Nothing flexes or bends. The temp displayed is very accurate when referenced with a thermometer. My only complaint is that the 2-piece diffuser should either be standard equipment, or an optional upgrade at order time (in exchange with the stock diffuser). The 2-piece diffuser is a MUST HAVE accessory. Cleaning the firepot is a messy pain the A** without the 2-piece diffuser. I didn't think I would need it, But I ended up ordering it about 6 weeks after receiving my YS640. I also highly recommend the direct grilling grates. I was able to get rid of my gas BBQ because the direct grilling feature works so well on the YS640.

To your question regarding Traeger, I’ve not reviewed their grills of yet. I do know that Traeger as a company is taking steps to up their game some, as quality/reliability of their pellet grills has diminished over the last few years. The new CEO – Jeremy Andrus – they hired comes from the Skull Candy company and brought that headphone company from annual sales from less than $1 million to nearly $300 million.
