Brad Barrett at Grill Grates makes a fantastic product. Reverse searing 2″ steaks and chops (or thicker) works great on pellet smokers as you can get the internal temp up to 10-15 degrees below your desired finish temp, remove them and loosely wrap / cover in foil, crank up the smoker with the grates on to say, 400 degrees, and then sear off your protein getting great grill marks with little to no sticking at all. This website has a lot of negative reviews... I mixed some salt and pepper, rubbed onto some ribs, and put on the Traeger. After about 5 hours sitting in my a/c living room, looking out the window, at perfectly managed temp, the ribs were done, perfect, juicy, with a beautiful wood smoky flavor that I've never gotten on charcoal or even in restaurants with professional pitmasters and all. I did phone Traeger when I was putting the grill together and doing the 1st burn in, there were humans there (!) and they were knowledgeable and helpful on the 1st time.

My wife purchased this cooker for me for Christmas three years ago when I was working on the road. I had been a gas man for years and had converted to charcoal with great success and enjoyment. I built a UDS smoker and was really getting into the slow smoking with better temp control. Then my son ratted on me and told my wife that I had been drooling over a Yoder Pellet Grill. She surprised me to say the least as I would have never bought this unit myself. I've had several cars that cost less than this smoker! Wow. In person, this grill is build by people that love their job. The smoke flavor compared to a Weber kettle is more delicate than harsh. Temperatures are very even across the grill with warmer sides within an inch of the body of the grill. Being able to start it in two minutes and get to cooking in ten is very handy. Being able to run downtown without worrying about the temp is awesome. I've had it get a little lower than where I had set it, but not by more than 15 degrees. It has great reliability in any weather. We live in northern Montana and this thing just does what you want it to do. Great for making jerky, slow smoke, grilling, and baking. Wood fired cookies are one of our favorites. I've smoked cheese on it during the dead of winter at -15 degrees. Bacon...wow. If you have never had slow smoked bacon I feel sorry for you. Don't worry about not liking this unit after the purchase. I've thanked my wife more times than I can remember and I've received just as many compliments back from everyone who has sampled the food. In smoke mode the controller is no longer controlled by the thermometer, it merely switches the pellet feeding auger on and off. On time is 15 seconds, off time ranges from 45 seconds at P0, to 165 seconds at P15. Temp and smoke are controlled by the duration of off time: the auger always runs at the same speed. More smoke is produced at higher P settings and lower temp settings because longer off times allow the pellets to smolder. At P0 in smoke mode or "High" in cook mode the auger replenishes the pellets at a faster rate, creating more flame, less smoke.
Traeger sent me replacement; fan motor, auger motor, temp controller, then a whole burner module assembly. None of these parts helped my problem at all. After working with them thru about 10 phone calls, I finally talked to a second level supervisor named Jessie. He agreed my grille wasn't working properly, but would not let me return it. I told him I would accept a replacement 22 inch grille, which I believed would get up to temperature. He agreed, but would not agree to refund the $200 difference in price. I decided to cut my losses and accept this offer. He said he would call and email back with shipping details. That was over 2 months ago and no call. I've since called them 3 times. The phone help doesn't know Jessie and always claim to leave him a message...but still no call. I'm way past the time limit to protest the charge with my credit card, so I guess I'm stuck with this piece of junk. This kind of lack of integrity from a company does not deserve anyone's business.

I bought this grill in May 2018. Had to return it to Ace 9 days later because it wouldn’t keep temp or would go out and fill up with pellets. I had to have the GM of Ace fight for me to get a new grill from Traeger. Once I did the new one seemed to work for about a month. Since then this one does the same thing as far as heat and pellets. I thought this thing was supposed to be a set and forget grill. If I don’t watch the heat it will be 200+ degrees over the set heat or sometimes be at ambient temperature and I have to pull me meat, grill and grease tray out so I can empty the heat pot of all the Unburned pellets. This thing is nothing but trouble. Does it cook great meat? Yes! When it works and you babysit it the whole time. On top of that customer service is about as useless as ** on a boar! They will try and tell you it’s something you’ve done wrong. I will be buying another brand smoker and giving this one to someone who like to deal with troubles.

Rec-Tec has a strong following, and – as with the rest of the pellet grills in this review, will do you right. They’ve recently gone to an all black (no more red) look with their newer models. Though, you can probably still get the red. They have the most pellet holding capacity of any other grills pretty much, so that might be a plus for you. Getting temps back down is pretty fast… 5-10 minutes or so. I’d consider reverse searing, so long as your steaks are 1 and 1/2 inches or more. Thinner cuts won’t work. So, basically – you get the steak up to around 125-35 at around 225-250 F. Wrap it in foil. Then, crank your heat up to the highest setting, remove your steak from the foil, and sear it off on both sides to your desired doneness level. This limits the amount of grey – making for a more uniform pink from the top to the bottom of the steak.
love your article and got lots of good info from it….i do have a question tho that i didnt see an answer to…..do pellet grills have to use just pellets?….i have 3 acres full of oak branches that could be shredded. my question is can a pellet grill use home shredded wood chips to burn and cook with or is it mandatory that the fuel be in the pellet state?….would be great if i could find a good use for all these fallen branches….
After 10 days of not seeing anything in my email I called them. They told me they had no order. After two weeks and more phone calls then a grill finally shows up but without the cover or the pallets which I paid for and was on the order. Three calls into managers and customer service still not resolved. When I threaten to take the grill back to Costco I was told to go ahead and have a nice day.

Right off the bat I could tell this smoker was made in America! While putting it together the holes actually matched up! ATBBQ- beat the 5-6 week lead time and delivered in two weeks out to California. This thing is a beast- the heavy weight I was looking for in a smoker and it has the most consistent temp I have ever had with a pellet grill. I messed up on the first pellet grill that starts with a "T" and should have started out with the Yoder YS640. If you are on the fence or wondering if it's truly worth the cash.
