Hey Todd – what pellet grill do you have? Also, by short cooks, how long are you talking? Have you looked at the burn pot? If it’s overfilled, you may need to vacuum it out, along with the interior of the cooker. Then, put 10 or so pellets into the burn pot and start it up again. See if that helps. There should not be much if any ash in the food chamber area or on the food. At least not in my experience.

Though it is technically a grill, you can carry out so much cooking styles in it. It can be used to sear meats and other food to a perfect golden crusty perfection; it can be used to bake quiches just like you would in a normal indoor oven. This is absolutely a trademark appliance that can also be used to smoke food, it can also be used to slow braise food, making it ideal for cooking up winter stews and casseroles. And very obviously you can grill in this thing. It was the last day in the road show so I figured we could always return it if we have buyer’s remorse. Having no past experience with pellet smokers/grills, I am doing my due diligence in researching the reputation of this company and comparing to others in the market. The selling point for us with this particular Traeger grill was the ability to convert this to a built in unit by simply taking off the right side shelf. The sales rep at Costco had a picture of one that his parents had built into an attractive brick surround and we liked the option, however, after reading your post and several other sites, I am finding that Traeger may not be the best investment comparatively and with a purchase this expensive, long-term quality is extremely important to us. In staying within the same price range, I am very interested in the Rec-Tec and it’s stainless steel build. My question is, do you know if the Rec-Tec or another pellet grill @ the $1000 price point can be made to look “built-in” and if so, are there any dangers or potential problems with this.
When it comes to buying a new pellet grill, do yourself a favor and conduct some serious research on the grills you are looking to purchase before jumping into it. Just because a pellet grill looks sharp on the outside and has a cheap price tag to go along with it, doesn’t necessarily mean you’ll have spent less money over the course of three or four years compared to buying a well-built pellet grill with a good warranty.

Thanks for the quick response and advice. I see a pellet pro hopper assembly is around $250 compared to the Memphis pro at over $2000. I didn’t realize that drafting isn’t important for the sake of temp regulation but what about how the smoke travels from the firebox towards the meat? Hey Jimmy, thanks for commenting here about your experience. I’m sorry to hear your experience was less than optimal. I have only cooked on the Traeger pro models. I do know that it is good practice to vacuum out the burn pot after cooks of a few hours or more. Not sure this was where your problems were initiated. Did you contact Traeger support? If so, what was their response?
To cook food using a pellet grill, put the pellets into a hopper. When you turn it on, the igniting rod will burn pellets in the fire. The motor-driven auger will then supply the fire pot with pellets from the hopper. The ratio that auger delivers pellets to fire pot depends on the settings you control. If you set it at a high temperature for a longer period of time, the auger will keep on feeding the fire pot with pellets. However, if you are slow-cooking and set a low-temperature one, the feeding and delivery of pellets will also slow down.

Remember, in cook mode the auger idles when the temperature is correct, but the P settings continue to function in idle mode. Ortech recommends the P2 setting as the default idle rate in cook mode. However, as one gains experience, the P settings can be used to improve the grills performance. For example, when using high temperature settings, select P1 or P0 to reduce auger off time and maintain strong, steady heat. If you have trouble hitting low temperatures on a sweltering day, increase the P setting to increase auger off time. It does not have a significant effect on smoke production. Ordered a Traeger Ranger and paid with PayPal. Never was delivered. Traeger blamed PayPal for a failed transaction. PayPal confirmed transaction was completed and they had the money. Traeger then claimed they couldn’t find the order. Gave them the order # and the PayPal transaction # and claimed they couldn’t find them. PayPal is now reimbursing me and collecting from this crooked seller. If you read the reviews they use the “we can’t find the order” excuse over and over again. Never buy from them again.

I do have a question for you that i didn’t already find answered… How important do you feel a pellet release option is for a pellet fed BBQ? I have only found 3 models that have it; Traeger, Cabela’s Pellet Grill, and Camp Chef. It seems to me that this would almost be a must to make things easier to clean up when done smoking. What are your thoughts on the pellet release, and then your thoughts on these 3 pellet grills.
I have owned my YS640 for about 9 months now. Before I bought this I researched smokers/grills for about 2 years because I had very little experience with them & cooking in general. With the help of a few good websites I have produced some great food. There is a ton of room to cook on & the heat stays pretty much where you want it. Only a few issues I have had is that where the stack mounts to the side of the grill it drips. I did have a scratch on mine from the shipper & when I called about it I was sent a can of matching high temp paint very quickly. One thing that I like the most about this smoker is it is heavy. You can tell that this thing was built to last.

Check the grease pans or collectors before smoking because the collector could be full and overflow, starting a fire. If there is a grease chute then clean it for sure.
I have yet to have any problems with my smoker, other that what I caused for myself. Please follow the instructions on covering the heat diffuser plate with aluminium foil. When fat from the meats that you are cooking (mine was chicken) it will cook right there, and is difficult to get off. When you follow instructions, this cooker is a dream come true.
Just putting a stamp on your info and recommendations. The Pro is definitely a Pro! Consistent, excellent temp control, juicy and great flavor. Smoke ring, some of my ribs are pink all the way through and dripping with juice. Smoke profile, good, not over powering. I have used 45# of hickory so far, 20# of cherry and a few pounds of apple and pecan. Have not tried anything but Lumberjack but that will be the next experiment. I have tried the smoke tube and it is ok. I was worried about getting an ash or bitter taste as the smoke is fairly heavy and a little acrid smelling if you let it burn from bottom to top. So I lay it down and light on my wife’s Weber gas grill side burner and get the whole thing burning good and then blow it out. If it smells acrid your meat will get some of that taste. Starting the tube this way it is still going an hour later.

Yeah it seems like no one is providing any input on it…I was interested in having them review it and do a direct comparison to some of these other grills. I made the mistake of getting a Myron Mixon pitmaster Q3 at sears. It turned out to be a waste of money and the slight humidity I had caused the pellets to burst and seize up the Auger. The higher the temperature range goes, the more your pellet smoker can do. For example, a pellet smoker with a temperature range of 500°F- 700°F is hot enough to sear food and even bake a pizza. Consider getting a good thermometer or even a meat probe so you could have an accurate reading and make sure you are cooking your food at the right temperature.

Yes, no one likes to read the instruction manual. But there are many advantages of learning the specifics of your grill and reading the manual is key. Generally, you should not use water to clean your pellet smoker, so keep your hose pipe far away. These smokers have digital controllers, a motorized auger, a fan and an igniter rod for the fire pot. These parts will get destroyed if they come into contact with water. You should gently dry scrub the dirt off these parts, making sure not to disassemble any parts. Cleaning the thermostat will also prove to be essential; otherwise, it may read internal temperatures inaccurately.

Eric, I’m sorry for the trouble you’ve had with your Traeger. Not sure this will help, but here is how I make sure I don’t have the problem you had. When I start after a long previous cook or any cook at all really, I vacuum out all the dust and vacuum out the burn pot. Then, I put a handful of pellets into the burnt pot, insert the heat deflector, the drip tray, and grate. I find that this keeps things working well. Sometimes, the burn pot will get too full of ash and this can cause the problems that you had. Give it a try. If it works, please let me know.

I have used a pellet smoker for about five years, and looked at, or used, many different brands. I have added auxiliary smoke generators, and tried almost every way possible to create authentic BBQ on a pellet smoker— It can’t be done. When the vendors, or users, refer to subtle smoke they mean virtually no wood flavor. Do yourself a favor and try a simple test: go to a really good BBQ joint, or BBQ competition; try some of their Q and then compare it to pellet meat. There is no comparison. I wanted the pellet unit to produce good Q in the worst way because of the ease. You cannot duplicate the smoke created in a wood, or wood/charcoal firebox with compressed sawdust. It pains me to say it but it is true.
These food grade wood pellets contain only the best and the pure compressed sawdust from hardwood and are sometimes added with natural vegetable oils, perfectly safe and healthy for your food. However, the carbon in the soot and ashes that fly off the firebox can get embedded into the body of the food, which can get inside your body. I bought this grill in May 2018. Had to return it to Ace 9 days later because it wouldn’t keep temp or would go out and fill up with pellets. I had to have the GM of Ace fight for me to get a new grill from Traeger. Once I did the new one seemed to work for about a month. Since then this one does the same thing as far as heat and pellets. I thought this thing was supposed to be a set and forget grill. If I don’t watch the heat it will be 200+ degrees over the set heat or sometimes be at ambient temperature and I have to pull me meat, grill and grease tray out so I can empty the heat pot of all the Unburned pellets. This thing is nothing but trouble. Does it cook great meat? Yes! When it works and you babysit it the whole time. On top of that customer service is about as useless as ** on a boar! They will try and tell you it’s something you’ve done wrong. I will be buying another brand smoker and giving this one to someone who like to deal with troubles.

Pellets look like rabbit chow. They are about the width of a pencil and as long as a couple of erasers. If they get wet they turn into a pile of sawdust. The beauty of pellets is that they have none of the additives and fillers in charcoal briquets, so they combust almost completely. Almost zero ash. The pellets provide the heat as well as flavor. No need to add wood chips. Surprisingly, they do not produce overly smoky food. If anything, the food is undersmoked to some people because the combustion is so complete.

4. Temperatures were constantly all over the place. For example, on 70-80 degree days I learned to set my controller at 180 if I wanted to cook at 225-230. It was not uncommon to see temperature swings of +/- 30 degrees. Some Traeger users will tell you "yeah but did you play with the p-settings?" Why? Why would I want to have to constantly adjust a setting to make it hold a temp within +/- 5 degrees. Let's be honest. Most people want to set it and forget it. I fall into that category. This particular problem was so frustrating I went and bought an igrill 2 to monitor the internal smoker temp. As a note to this, I also bought 3 different brand controllers to try and remedy this problem with no success. Beyond frustrating!!

I bought my second Traeger Grill around Thanksgiving (my last one died after 3 months), spent most of the day assembling it only to find it didn't work. Customer service told me to reset the thermostat, I did and it shut down.  I did this routine a few more times with customer service and it kept shutting down, day after day.  Traeger reluctantly sent me a replacement grill and promised it would be Fully assembled (I have little use of my left hand and can't work with small parts)  Well it showed up unassembled in a bunch of little boxes. Customer service told me 4 times that they would call back with a local Traeger dealer to assemble it. Four promises to have someone come out and not even a phone call.

I use to have a charcoal/wood fired smoker and it was a nightmare maintaining temperature especially on a long brisket cook. Instantly I've fallen in love my YS640 coupled with a fireboard. You literally set the temp load it up and walk away with no stress or worries about maintain temperature. It provides great smoke flavor too. Yes it is an expensive purchase but that is because this thing is built like a tank and will last for decades.


Apart from the replacement parts for a pellet smoker, there are also certain accessories that one can use to increase the range of its usefulness as well as improve its performance. A user can attach a griddle attachment to a pellet grill to use it as a flat top griddle, or use a hopper extender to increase the pellet hopper capacity; there is an attachment for every purpose to suit all of your needs. Convection is achieved using a number of techniques. Air is fan forced into the grill and channeled throughout by our arched flame broiler. One final word of caution when it comes to pellet pricing.  If you see a price on pellets that seems too good to be true, there’s probably a reason for it. If the pellets you got an amazing deal on creates twice as much ash, doesn’t burn as well, generates wild temp swings and ends up ruining a $65 brisket were they worth it?  What about if that flame out or temp swing cost you a whole pit full of meat and ruined the family reunion the next day?  We are all for saving money as much as anyone, but perspective is key here.  We are in no way saying that great pellets cannot be had for pennies per pound, but we are definitely saying, that if those pennies saved are not on a proven brand that you can trust then it’s probably not a bet worth taking.

Traeger's, unlike other models, have a temperature probe, these sensors tell it if the temperature is too low and automatically feeds more pellets to the fire. You can set up the temperature in 5-degree increments. Other brands and cheaper versions only offer three settings low, medium and high. There is no sensor to monitor the temperature. If you are purchasing a pellet grill it is because you can set it and forget it. If you plan to hoover then it makes more sense to use a standard smoker or to transform your grill into a smoker.
Competition: If you are buying a smoker for participating in any competition, then pellet smokers are your best choice. Gas or electric smoker grills are not allowed in any competition as they are using automation. Just started shopping around for a pellet smoker. Am also going to need a new gas grill soon. Stopped in at the local BBQ supply store today and they showed me the Memphis Pro and said it would function well for both smoking and cooking steaks/burgers. Price point on that one is pretty high. Louisiana Grills is a respected brand when it comes to pellet smokers. It was one of Traeger’s earliest competitors that entered the market after the original Traeger patent expired. The biggest difference between the two brands is that Louisiana Grills makes pellet smokers with advanced features for a relatively affordable price. The Louisiana Grills LG700 is no exception. It has a one-touch PID controller, a programmable meat probe, an adjustable flame broiler for direct grilling, an upper cooking rack and a lower storage shelf.
I bought this grill in May 2018. Had to return it to Ace 9 days later because it wouldn’t keep temp or would go out and fill up with pellets. I had to have the GM of Ace fight for me to get a new grill from Traeger. Once I did the new one seemed to work for about a month. Since then this one does the same thing as far as heat and pellets. I thought this thing was supposed to be a set and forget grill. If I don’t watch the heat it will be 200+ degrees over the set heat or sometimes be at ambient temperature and I have to pull me meat, grill and grease tray out so I can empty the heat pot of all the Unburned pellets. This thing is nothing but trouble. Does it cook great meat? Yes! When it works and you babysit it the whole time. On top of that customer service is about as useless as ** on a boar! They will try and tell you it’s something you’ve done wrong. I will be buying another brand smoker and giving this one to someone who like to deal with troubles.
I have several smokers I have used over the years. I have dialed in everyone I own over a course of trial and error. They all get great results, but require me to tend them all throughout the cook. I wanted a smoker that I could easily get to the desired temp, maintain the temp, provide good smoke flavor, and have the size to do a small or large cook, and not need me to be tending it throughout the cook. The learning curve on this smoker is super easy if you know all your temps, your first cook will give you the results your looking for. I was a little worried that I was not going to get the smoke flavor with a pellet smoker, but my brisket turned out amazing, very tender, the smoke ring was perfect. When I was searching for a new smoker I was a little shy of the Yoder based on the price, but when you figure in the ability to grill as well this became a better alternative. The quality is top tier, this is built to last a long time. I'm so glad I went with the Yoder YS640 no regrets.

Hey Kim – thank you for this. I’ve had this happen with numerous pellet smokers, including GMGs. What happens most often when it happens is that I’ve been remiss in properly cleaning the grill out after several uses (vacuuming the fire pot out). This causes the ash etc to cover up the heating rod, thus making the temperature lower than expected. The auger keeps feeding the fire pot to compensate and you get what you’ve described.
While the Traeger Lil-Tex does offer similar features as our top pick, such as a digital LED temperature control system and an auto-dispensing auger, there was one missing feature which we thought was necessary. This product has a smaller grilling area and lacks a removable upper rack, which gives you less grilling and prep space. I should mention that the unit does come in a bigger 700 square inch version for $200 more, as well as a smaller version that costs less. If this smoker is too big or too small for you, there are always other options available. Compared to our top pick, it’s also more expensive despite offering similar specs. Aside from that, this is a very efficient and reliable smoker – might even have been the best if our top pick wasn’t available on the market.

In my experience, running Traeger pellets, the grill has functionally three temperature settings;  1) Off. This is self explanatory. Looks very pretty on a picnic table in the campground or on your patio table.  2) Hot and Smoky. Wide temperature swings, over-fueling, massive smoke followed by high temps. The controller gets into a "correction induced oscillation" of ever wider swings in temp potentially resulting in either Ler or Her shut downs.  3) Very, Very Hot. This is the high setting where it will run 500+ temps and gets the deflector/drip pan very hot even with the lid open. Burner sounds awesome in Open Lid Mode. Very Macho.
This unit will not let even a single pellet go to waste. No need of worrying whether you’re out of pellets or not. You can carry pellets at a maximum of 20 pounds, with the digital thermostat ensuring the pellets are being used properly. Hey Oscar, based on what I think and my discussion with my buddy Shane Draper of Draper’s BBQ, you’ll probably only need to run 14 hours for a brisket cook – given the convection nature of your pellet grill. You’ll probably go about 1 lb per hour or a little less – depending on the weather and other variables you mentioned. Again, pellet cooking is a little bit give and take where you’re getting ease and a more set it and forget it cook experience in exchange for some additional fuel use.
The higher the temperature range goes, the more your pellet smoker can do. For example, a pellet smoker with a temperature range of 500°F- 700°F is hot enough to sear food and even bake a pizza. Consider getting a good thermometer or even a meat probe so you could have an accurate reading and make sure you are cooking your food at the right temperature.

I have the smaller Traeger 22 pro model and have been very happy so far. Regarding controllers, my verdict is still out on whether they’re what you need. It’s almost getting to a point where I “want” some temp swing, especially at the lower settings, in order to get a bit more smoke from the cooker. 15 degrees either way on temp is pretty normal. You might find that this is the case, even when controller units “read” steady. Pellet grills all feed pellets into burn pots in cycles. So some swing is inevitable. Hope this helps.
Hey Jim, first – thank you for commenting on this post! As you probably know from reading the contents, pellet smokers are a great choice for set it and “nearly” forget it BBQ. Of course, you’re not going to get the same smoke profile with “pellet poopers” that you are likely getting with your other smokers. That said, the smokers listed here are all going to hold temp very well – even in lower temperature or windy weather. I do see instances where temps and wind effects pellet grills, but solutions including a fireproof blanket over the top of the smoker seem to mitigate things well enough.
